Pi day, a math-centric holiday originally celebrated by enthusiastic geometry teachers, has now also been co-opted by the pie-baking community as a welcome excuse for a savory or sweet slice in the Ides of March. In celebration of all things circular, we’ve collected four recipes for your pi(e) day celebrations.

Some of these recipes require shortcrust. We would recommend that you use this recipe for your pie crust.

Amaretto Sugar Cream Pie

Amaretto Sugar Cream Pie

This rich, tasty twist on the classic Indiana state pie will be a new family favorite. Though you can blind-bake your crust and fully cook the filling on the stovetop, I prefer the sugary crunch that develops on the pie when the filling is thickened only a minute or two, then baked in the oven along with the crust. Either method is acceptable, but instructions below are for the latter.

Four Berry Pie

There’s nothing better than a classic fruit pie, complete with a flaky crust and sweet berry goodness. This pie is delightful year-round; the filling is mildly spiced and finished with a bit of butter to round out the brightness of the berries. With all those antioxidants you could almost call it healthy food—almost.

Orange Espresso Chocolate Pie

This silky chocolate pie’s elegance belies its simplicity. Elevated with fresh orange zest, almond extract and espresso powder, the only truly challenging part of this pie recipe is ensuring your chocolate is cool enough to not collapse the whipped cream and spoil your efforts. We promise that the wait is worthwhile.

Mushroom Leek Pot Pie

Mushroom & Leek Pot Pie

A decadent vegetarian entrée for a chilly late-winter evening, this pie will warm you, body and soul. The rich, savory flavor of this dish can support a heavily herbed gravy, so taste as you add and don’t be afraid to be a bit heavy-handed!
