Sautéed, roasted, grilled or broiled, there are many easy ways to prepare and enjoy this umami-rich ingredient.

Sauté: Slice, dice, chop or halve mushrooms — or just plop the whole thing in a pan. Sauté in olive oil. Wait until the bottoms turn light brown, then flip once and repeat.

Roast: Preheat oven to 450°. Brush mushrooms with oil. Place on a shallow baking pan. Cook for 20 minutes, stirring occasionally.

Grill or broil: This method is ideal for large-capped mushrooms such as shiitake or portobello. Lightly brush caps and stems with olive oil to keep them moist. Grill or broil 4 to 6 inches from heat source for four to six minutes on each side. Brush once or twice to prevent mushrooms from drying during grilling or broiling.
