Recently edible indypartnered with bartender, Joe Goldsmith of Livery to create an original cocktail for the spring 2017 issue. Joe created La Piña Furtiva (the sneaky pineapple). We teamed up to create an edible indy minute making the cocktail (watch the video below) and we also caught up with Mike Cunningham, Founder of Cunningham Restaurant Group to talk about the concept of Livery in downtown Indianapolis.

EI: Livery – How did you land on the name Livery and what does it mean?

MC:In North Amercia, a livery was a horse stable.The west end ( 2 story structure) of the building was built in the mid to late 1800’s and was a livery maintaining the horse and buggy trade of that era. The architecture significance and history was the draw and made it very easy to name the new restaurant.

EI: What is the inspiration behind the concept for CRG?

MC: The menu was an idea derived from conversations with our Company’s head chef Carl Chambers (recently named 40 under 40 by the IBJ). We wanted to do something we haven’t done yet and we landed on a Latin inspired concept that provide chef inspired food under $15. The Indy food scene is growing with fresh new ideas and concepts are flourishing. Diners are responding to creative and exciting dining experiences.

EI:The focus is Latin inspired cuisine and libations – What is the one dish you simple HAVE to eat?

MC: A few of my favorite items are the Skirt Steak, Red Drum and any of the empanadas. The pomegranate salad and roasted cauliflower are favorite starters. Plus we have margaritas on tap and over 40 tequilas and a dozen mezcals available.

EI:Our must tries are the Yuca fries and we concur on the empanadas which are a staple in most Latin countries. (and don’t miss the drinks…)Dessert is also a can’t miss. We recommend you try these three popular latin desserts and in this order churros, flan and tres leches.

EI: Lastly, give us the low down on why our readers shouldn’t miss a chance to dine at Livery.

MC: Livery is more casual than Mesh and Union 50, it is a great place to grab a margarita and some shareable small plates in a cool casual atmosphere.In the summer the restaurant offers a great rooftop patio area to dine and drink on. Each and every concept we create, our goal is to provide an exceptional dining experience with quality food, friendly and efficient service in an exciting and stimulating environment.
