Where casual meets upscale, Paul Robinson, the lead chef and operations manager of Pizzology, has helped make the Carmel-based pub and pizzeria a beloved gem in the Indiana food scene.
In August 2023, Pizzology faced an unexpected setback when a fire broke out in the kitchen. Although the fire was contained to the roof, extensive water damage forced them to close their doors temporarily.
Thanks to a strong commitment to their team, Pizzology continued to pay kitchen staff and managers through the closure. “The community support has been enormous,” said Robinson, reflecting on the resilience of both the restaurant and its patrons.
After months of repairs and a complete remodel of the dining room, Pizzology is back and better than ever. Guests will enjoy a refreshed space and the perks of an even more efficient kitchen layout, which is a game-changer for the back-of-house.
From Scratch, with Love
Pizzology makes as much as possible in-house from their dough and sauces to their house-made sausage. Robinson and his team take pride in crafting quality at every step, supporting local businesses in every way they can.
“If we’re asking people to support us, we should do the same,” said Robinson. Farms like Gunthorpe Farms, Smoking Goose, Fishers Farms, and Becker Farms provide top-quality, locally-raised ingredients that reflect the community’s agricultural pride.

Creativity on the Fly
Robinson thrives on creativity, especially when it comes to Pizzology’s weekly specials. “I’ve been doing weekly gnocchi specials for the last 10 years,” he said. From a jalapeño corn purée on a sweetcorn pizza to Indiana-inspired seasonal toppings, his innovative approach turns familiar ingredients into unforgettable bites.
A Pizza with Heart: The Story Behind “The Jesse”
One of Pizzology’s most cherished menu items is “The Jesse,” a pizza named after a regular customer. During its first year on the menu, Pizzology donated its sales—around $15,000—to the Special Olympics.
Jesse, a person with special needs for which the dish was named, frequented the restaurant with his mom before the closure, always ordering the same thing: red sauce, pepperoni, provolone, mozzarella, parmesan, and a breadstick with two tomato sauces. Jesse and his mom were guests of honor at Pizzology’s soft reopening. His favorite dish not only brought good money to a worthy cause, but it’s now a permanent part of pizzology’s history.
Pizzology Today
While the restaurant isn’t open for lunch yet, Pizzology’s dinner hours offer a chance to indulge in creative pizzas, wings, and more. Stop by from 4 p.m. to 9 p.m. daily, with extended hours until 10 p.m. on Fridays and Saturdays.
Great food isn’t just about what’s on the plate—it’s about the stories and people behind it.
Whether you’re a longtime fan or a first-time guest, there’s always something special waiting for you at Pizzology. And if you’re looking for a recommendation, “The Jesse” is always a great place to start.
