This summer, we’re keeping things lush, flourishing, and verdant. Self-actualize a bit of that with this green goddess salad. Rize and Garden Table have this flavorful salad on their menus, but you can just as easily mix up your own at home.
This mix of greens is so flavor-packed, it’s hard to remember you’re eating something that’s also nutrient-dense.

Salad Dressing
Ingredients
- 125ml sour cream
- Cilantro
- Dill
- Chives
- 1 clove of garlic
- 1 lemon
- 50ml Olive oil
- 1tbsp Capers
Rough chop cilantro, dill and chives
Dice garlic clove until fine
In a food processor, combine rough chopped herbs, diced garlic, capers, sour cream, and olive oil.
Zest the lemon into the mixture, then slice the lemon in half and juice one half into the food processor.
Pulse until the mixture begins to look smooth
Add salt and pepper to taste. Squeeze more lemon juice in if you’d like your dressing to be more acidic.
Continue to blend in the food processor until the mixture reaches your desired consistency.
Mixed greens salad
Ingredients
- green goddess dressing (see above)
- Romaine
- Arugula
- Butter lettuce
- Marinated artichoke hearts
- Sugar snap peas
- Broccoli
- Cucumber
Chop and clean romaine, removing the tough base, and cutting the leafy greens into roughly 1-square-inch pieces.
Similarly chop and clean the butter lettuce.
Clean arugula and combine in a large bowl with romaine and butter lettuce. With clean hands, toss gently until everything is evenly distributed.
Strain the marinated artichoke hearts and pat them dry with a clean kitchen towel or paper towel. This is messy work, so you’ll want to wash your hands with soap after.
Roughly chop snap peas and broccoli into dime sized chunks. Slice cucumber into medallions then quarter them.
Add your chopped vegetables to your leafy greens, tossing again to combine. Roughly chop the artichoke hearts, then add them as well.
Plate mixed green salad into serving bowls, then top with green goddess salad dressing. You can do this directly from the food processor, or funnel the dressing into a jar before pouring or scooping out with a spoon.
