Every week, a new food hack or recipe trends on Tik Tok that everyone just has to try. It’s not often that I actually make the recipe, but these two two viral Tik Tok Recipes look too interesting not to make.
The Watermelon Caprese “Sandwich”
The popular food account @ViralRecipes posted the viral video back in July by suggesting to swap your bread for watermelon to “freshen up” your lunch.
Here’s My Take
While the video received some criticism from viewers for the use of watermelon as bread, the fruit surprisingly complements the other ingredients. The combination of watermelon and tomato makes for a light and refreshing, though slightly messy, meal. Most of the prep time is spent cutting the watermelon, making it a fairly quick recipe. If you’re interested in a similar profile with a little less experimentation, visit Michaelangelo’s where the Tomato Caprese starter salad on their menu is a delicious alternative.
Ingredients
– Watermelon – Tomato
– Fresh Mozzarella – Fresh Basil
– Salt & Pepper – Olive Oil
– Balsamic Glaze
Instructions
1.Cut the watermelon into square shaped slices
2.Top one slice with fresh mozzarella, salt and pepper, tomato and more salt and pepper.
3.Add the fresh basil drizzle with olive oil and balsamic glaze
4.Finally, top it with another slice of watermelon
Chocolate Chip-less Rice Crispy Treat Cookies
This cookie recipe was posted by SeriousFoodFetish and has garnered almost 1 million views. It combines the popular Rice Krispie treats with chocolate and sugar cookies.
The Takeaway
Make sure to set aside some time for this recipe as the prep and baking as it takes about an hour and 20 minutes to make these cookies. The prep is pretty straightforward, with the biggest challenge being mixing in the Marshmallow fluff. If baking isn’t your thing, but you’re craving some sweets, you can find similar ooey-gooey cookies at local favorites like Rosie’s Place in Noblesville or check out Please &Thank You in downtown Indy.
Ingredients
– 1 roll of store bought sugar cookie dough – 16 oz of chocolate chips
– 1 ½ cups of rice cereal – 1 tablespoon of coconut oil
– 4 oz of marshmallows or marshmallow fluff
Instructions
Preheat your oven to 350°F.
- In a bowl, combine cookie dough and rice cereal. You may have to let the dough sit at room temperature for a bit to soften before mixing.
- Add the marshmallow fluff or cream to the dough and mix.
- Use a cookie scooper and place six balls, spaced out on a parchment-lined baking sheet. Freeze for 15 minutes.
- Bake for 10 minutes, and let sit for 20-30 minutes—they will be very soft when they come out, so it’s important to let them cool. Repeat with remaining dough balls.
- Melt chocolate with coconut oil in 30-second increments, stirring between until melted.
- Carefully place the cookie so it “floats” in the chocolate, and remove using two forks. Place on parchment and repeat with all cookies.
- Let sit in the fridge or freezer until they harden. Store in the fridge to keep chocolate from melting.
These recipes were a delicious success. Whether you’re craving something new and adventurous or a classic treat, these recipes offer something for everyone.
