This take on the classic gimlet might raise an eyebrow at first, but once you take a sip, you realize the vegetal crisp flavor of celery plays well with the botanical gin– and a squeeze of lime brightens it up just enough. This cocktail is balanced, refreshing as can be, and pairs perfectly with an unseasonably warm March afternoon.

Ingredients
1 small celery rib chopped, plus a leaf for garnish
1/4 oz simple syrup (1:1 parts sugar and water)
2 oz gin of your choice
3/4 oz fresh lime juice
Instructions
Add celery and simple syrup to base of cocktail shaker and muddle until celery is broken down and juices are released. Add lime juice and gin and fill shaker with ice. Shake until the outside of the shaker is frosty. Strain into chilled glass, garnish with celery leaf. Enjoy!
