Inspired by Round Swamp Farm’s Viral Chicken Salad
Internet travel vloggers bring us along and share their insights on the hidden gems, making the once off the beaten path, local spots hot. Round Swamp Farm is a working farm in East Hampton that started as a small farm stand and has grown into multiple locations throughout the region. The now famous chicken salad has a crazy-fine texture that is almost more like pâté and is achieved by shredding chicken and grating celery and shallots versus a traditional chop. The technique is a little labor intensive, perhaps justifying the price tag that has become as much a part of its lore as the flavor. It works great as a sandwich, but it looks like the locals love to eat it on a cracker almost as a dip— perfect for cocktail hour on an open air patio or for a day at the beach.

INGREDIENTS
2 chicken breasts, baked and cooled
1/2 cup mayonnaise
4 sticks of celery, finely grated
1 shallot, finely grated
3 tsp rice wine vinegar
2 tsp garlic powder
salt and pepper to taste
1/2 lemon juiced
Handful of parsley, finely chopped
Tear chicken breast into small pieces placing them into a stand mixer bowl. Using a stand mixer with a whisk attachment, finely shred the chicken breast.
Remove bowl from stand mixer and add remaining ingredients. Mix well and adjust salt and pepper to taste. Serve on a croissant or other bread of your choice or just scoop up with a cracker or sliced apple.
