My oldest is leaving for college this fall, and in addition to packing the mattress topper and the shower shoes, I made sure he had a list of easy dorm friendly meals he can pull off with a microwave, a mini-fridge, and minimal cooking experience. These six made the cut: fast, nearly foolproof, and minimal bathroom-sink dishes.
Breakfast
Oatmeal Brûlée
Sometimes a poptart just doesn’t cut it. This hearty and sweet breakfast comes together quickly and makes for a warm and filling breakfast on a weekend morning when you just can’t be bothered to walk to the dining hall.
Ingredients:
2 instant oatmeal packs
1 tablespoon peanut butter
1 tablespoon honey
small handful trail mix
splash vanilla coffee creamer
Directions: Stir oatmeal until thick (it loosens as it sits) → work in PB + creamer until custardy → top with honey + trail mix → microwave 20 seconds until honey bubbles and caramelizes.
Lunch
Tuna & White Bean Smash
There are lots of flavor-packed canned tuna and beans available these days in the grocery store. Look for a spicy tuna, or canned beans in tomato sauce to make this a dead-simple no-cook meal.
Ingredients:
1 can spicy canned tuna or other flavored tinned fish (oil-packed) of choice
1 can beans of choice
crackers as needed
Directions: Stir tuna and beans together, dollop on crackers. No-cook, protein-packed.
Snack
Popcorn
Because sometimes popcorn is a meal!
Ingredients:
1 microwave popcorn bag
Directions: Cook according to directions, pulling when a few seconds lag between pops. Don’t burn it, the whole dorm will know.
Dinner
Loaded Baked Potato
A baked potato is one of the simplest, fastest, most satisfying of microwave meals. Also a great way to extend leftovers. DoorDashed some curry last night and have some leftover? Top your baked potato with it.
Ingredients:
1 potato
2 tablespoon shredded cheese
2 tablespoon sour cream
1 tablespoon bacon bits (pre-cooked/shelf-stable)
Directions: Stab potato all over with a fork or sharp knife. Microwave for 6 minutes for a “regular” sized russet potato. Don’t change any microwave settings. Top with salt, pepper, butter, and whatever else you like– a baked potato is infinitely customizable!
Dessert
No-Cook Froyo Bark
Most little dorm fridges have a tiny freezer. Too small for ice cream, not cold enough to keep things truly frozen, this Froyo bark is just right if you need something cool and sweet and you have a tiny freezer at your disposal.
Ingredients:
1 cup Greek yogurt
2 tablespoon honey
½ cup frozen berries
Directions: Mix yogurt, honey, and berries. Spread thin on parchment or plastic plate, freeze flat, snap into pieces.
Late Night
S’mores Mug
Another microwave treat to the rescue, chopping up a candy bar (I like Snickers or Milky Way) and adding it to a mug with the other s’mores ingredients makes a perfect sweet treat for a study session break.
Ingredients:
¼ cup graham cracker crumbs
1 chopped candy bar (Hershey’s, Snickers, Twix, etc.)
¼ cup mini marshmallows
Directions: Layer crumbs, chopped candy bar, and marshmallows in a mug. Microwave 15–20 seconds if you want it melty, or skip and eat it cold!
