Juicy, tender chicken breasts coated in a crispy, crust of cornflakes, Parmesan cheese, and zesty ranch seasoning. This easy, five-ingredient recipe is perfect for a quick and flavorful weeknight dinner.
Ingredients
4 boneless, skinless chicken breasts (about 6 ounces each)
1 packet ranch seasoning mix
1 cup crushed cornflakes (If you want extra crispy crumbles with you chicken like we do, crush up 4 cups of corn flakes)
1/4 cup Shredded Parmesan cheese (If you increase the corn flakes, increase this to ¾ cup)
1/4 cup salted butter
Instructions
1. Preheat oven to 375°F. Spray a 9×13-inch baking dish with nonstick spray and set aside.
2. Put corn flakes in a large zip lock bag and crush them using a rolling pin or your hands.
3. Add the ranch seasoning and Parmesan cheese to the bag and mix to combine. Transfer the mixture to a shallow bowl, then add the chicken and coat evenly.
4. Melt the butter in a microwave-safe dish. Dip each chicken breast into the melted butter, then coat in the cornflake mixture, pressing lightly to adhere.
5. Place coated chicken breasts in the prepared baking dish. Sprinkle any remaining seasoning mixture over the tops of the chicken breasts.
6. Bake uncovered for 35 minutes, or until the internal temperature reaches 165°F.
7. Serve warm and enjoy.
